Phase 1 or Phase 2 Xanthan Gum is becoming increasingly popular for use as a thickener – use when making gravy; soups; sauces or when cooking meats and vegetables; especially in the traditional Chinese style or wherever corn starch is required. Healthier; lower in carbs and higher in fiber than corn starch; xanthan gum will make your food moist and give it a nice smooth texture. Mix in water before using to prevent clumping.
